5min or Less Healthy Breakfast Recipes

Ever see those TV show where the kids get up, and there is a full nine-course breakfast with pancakes, toast, fruit, sausage, eggs, and happiness all laid out? Yeah, don’t you wish that was reality.

Let’s be real; most people are rushed for breakfast, so they either grab a pop tart or skip it all together which later leaves them hungry and looking for a quick fix.

When you go to bed late and have to be up, you’re going to take sleep over getting up and cooking a legit meal, so let’s help you out here.

Below are five quick breakfast ideas for those busy morning people.

Overnight Oats

This one requires just some prep the night before, but you’re going to take dry oats of choice and place a serving (this tends to be half a cup but check your oatmeal for their serving size) in a large glass. Next fill the glass with skim milk (or half and half if you can’t stand skim milk) almond or cashew milk, OR vanilla protein drink (my personal favorite) and place in the fridge overnight.

When you wake up to grab your oatmeal and go. The oats soaked ALL the liquid up overnight, so they are moist (lol) and ready to go!

ProTip: Feel free to add some fruit on top for even more flavor

Smoothie

There is an endless option for these, but if you want to kick up the healthiness a notch here is my personal favorite:
– 1 cup of spinach
– Water or milk
– Protein powder
– 1 serving of nut butter of choice.

Blend and enjoy!

Oh, and for those of you that are worried about the spinach leaves, spinach is what I call the chameleon of veggies. Meaning it adopts whatever flavor you give it, really it’s because the flavor of spinach is so mild that everything else overpowers it.

Don’t let the color fool you; it’s quite good AND filling.

Sidenote: If your fiber intake tends to be on the lower side the spinach MAY clean you out if you get what I mean.

Toast with Protein Butter

As soon as you get up, start one or two pieces of wheat toast, I prefer cinnamon raisin Ezekiel bread myself. When it’s reached your desired ‘toastyness’ smear some nut butter (or protein butter which is better) on the toast and get on your way.

Don’t make this one difficult. In my opinion, it’s one of the easiest simple breakfast options out there, just toast (or half a bagel if that’s easier) protein butter and go 🙂

For a list of possible nut butters, I’d recommend a company called Buff Bake

Avocado Toast with an Egg

Get your bread of choice (prefer it to be whole wheat or minimally processed, again Ezekiel is my go to, and you will use half an avocado and one whole egg.

Scramble or fry the egg, which takes less time than you think, and spread the avocado on the toast, and put the egg on top. Make sure to season the egg to your choice since avocado and egg tend to be a bit weaker in taste it’s the seasoning that can make this for you.

Scrambled Eggs with Chopped Veggies

Eggs take a lot less time than you think and if you have some pre-chopped veggies your set. For the veggies, if you are truly rushed for time you can buy the pre-chopped (raises hand) from the store.

I’d recommend since you are short on time starting with two eggs and judging from there if you need more. You can also use liquid egg whites as well.

To make just scramble the egg amount of choice and place the mixed veggies in with the egg, season to taste.

Pro Tip: Eggs will continue to cook AFTER you take them out of the pan so get them to where they are no longer runny, or just shy of being fully cooked, then take them out of the pan. They will cook for almost another full minute which you will find that when they are cool enough to eat, they have a good texture to them.
