đ Healthy Dessert Recipe: Cinnamon Apple Vanilla Salted Walnut Stuffed Pears (Yeah, it’s a mouthful… literally) đ
Letâs be honest â when you hear healthy dessert, do you roll your eyes a bit?
Yeah, me too.
Most of the time, itâs some flavorless mix of sadness pretending to be a cookie. But every now and then, you strike gold. And this one? Solid gold. Not only does it not taste like cardboard, it actually tastes like something youâd want to eat even if it werenât âhealthy.â
This started out as a random recipe I stumbled across on the internet. I gave it a few RTC-style tweaks, and what came out was one of the easiest, cleanest, and tastiest healthy desserts Iâve had in a while.
Hereâs the dealâŠ
đ Ingredients Youâll Need:

2 pears (Bartlett or Bosc work great)

1 apple (chopped into tiny cubes)

Cinnamon (a generous sprinkle)

Œ cup walnuts or pecans

A dash of vanilla extract

A pinch of salt

Water (for simmering)
đȘ Step-by-Step Instructions
1. Prep the Pears đ
Slice your pears in half and scoop out the center with a spoon or melon-baller (way easier). Make a little bowl out of the middle.
2. Simmer the Apples đ
Toss your chopped apples into a pan with about an inch of water. Bring to a boil, then turn down the heat to simmer. Add cinnamon, cover, and let it do its thing.
3. Vanilla-Salted Nuts đ§
(Okay, this part is optional⊠but donât skip it unless you hate happiness.)

Grab a plastic bag, toss in your nuts.

Add a splash of vanilla extract and a pinch of salt.

Crush the nuts inside the bag a bit so they soak up that vanilla/salt goodness.
Then stir them into the simmering cinnamon apples once most of the water has evaporated. Itâll start to look like apple pie filling. Yep. Thatâs your cue.
4. Stuff the Pears đ„
Take the apple/nut mixture and stuff it into your hollowed-out pears. Pack it in like itâs Thanksgiving. The more, the better.
5. Bake or Grill (Both Work!) âČïž

Oven at 400°F for about 20 minutes.

Wrap the pears in foil to keep them upright if needed â but leave the top open so it caramelizes.

Once the edges start to blacken (just a bit), youâre golden. Pull âem out, let cool, and boom â youâve got yourself a healthy dessert that doesnât suck.

You can batch prep the apple pie filling part and use it in oats, yogurt, or protein pancakes.

These taste amazing with a little Greek yogurt or coconut whip on top.
