*I saw this healthy dessert recipe SOMEWHERE on the interwebz and decided to put my own spin on it*
Cinnamon Apple with Vanilla Salted Walnut Stuffed Pears
Recipe Instructions:
Take a pear and cut it in half (I did two pears).
Hollow out the inside (I used a melon-baller, makes the process a lot easier).
While doing that, I want you do chop up some apple into some fine bit sized cubes.
Place the chopped apple in a pan with about one inch of water, bring the water to a boil, and then turn down to a simmer. Add cinnamon and cover to let simmer.
*This part is optional*
While the apples are simmering in a plastic baggie, place pecans or walnuts (doesn’t take much, about 1/4 cup), add vanilla extract and salt, and crush the nuts in the bag, allowing them to soak up the salt and vanilla.
Once you’re done with that, add the vanilla salted nuts to the simmering cinnamon apples.
When all the water has evaporated from the apples (it will look like pie filling), take out and use that as filling for the hollowed-out pear. Stuff the pear full of the cinnamon apple and salted vanilla nuts.
From here, you can bake or grill (I’ve done both).
Start with 400 degrees for 20min and add extra time as needed (every oven is different).
If you find they won’t’ stay upright, wrap in foil but leave the top exposed.
When you start to see the pear JUST START to blacken at the edges, pull out and let it cool off.
